The temperature of baking or frying the potatoes is crucial and my advice is not to overload the tray or the pan because the potatoes put on top of the pile will be smothered in their own juice instead of fried.

I put the tray in the preheated oven at 200 C (up + down + ventilation or high stage in the gas ovens) and let the potatoes fry for 30 minutes (the time can be extended up to 45 minutes & # 8211 depending on the oven ).
