Ingredients

  • 2 14-oz. blocks extra-firm tofu, drained, sliced lengthwise ¾” thick
  • 2 tablespoons coconut oil or canola oil, divided
  • Kosher salt and freshly ground pepper
  • 2 tablespoons gochujang (Korean hot pepper paste)
  • 2 garlic cloves, finely chopped
  • 1½ pounds Brussels sprouts, trimmed, sliced ¼” thick
  • 1 8-oz. can water chestnuts, drained, sliced ¼” thick
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon furikake or more sea salt

Recipe Preparation

  • Lay a clean kitchen towel or a double layer of paper towels on a large plate. Place tofu on it and cover with another layer of towels. Cover with another plate and place something heavy on top as a weight. Let sit for at least 15 minutes, then cut into ¾” cubes.

  • Heat 1 Tbsp. coconut oil in a large nonstick skillet or wok over medium-high heat. Place half of tofu in skillet and season with salt. Cook, turning occasionally, until browned all over, 8–10 minutes. Remove to a plate and cook remaining tofu. Wipe out pan. Reserve one-quarter of tofu for tomorrow’s lunch.

  • In a small bowl, whisk together the gochujang, soy sauce, and ¼ cup water. Heat remaining 1 Tbsp. coconut oil in the same skillet or wok over medium-high heat. Add garlic and cook, stirring, until fragrant, about 30 seconds. Add Brussels sprouts and gochujang mixture and toss to combine. Cover skillet and cook until Brussels sprouts are bright green, about 2 minutes. Add water chestnuts, tofu, and 2 Tbsp. water and cook, stirring frequently, until Brussels sprouts are tender and sauce coats the vegetables, about 4 minutes. Add sesame oil and toss to combine. Season with salt and pepper and sprinkle with furikake.

Caramelized Tofu Recipe

Ten years ago, after coming home from a weekend trip to Big Sur, I ended up throwing together one of my favorite tofu recipes ever - caramelized strips of tofu served over sautéed shredded brussels sprouts. Toasted pecans go into the pan as well and get oh-so lightly candied as they cook alongside the tofu and sprouts. I thought I'd post a slightly updated version today. Enjoy!

Here's how it came together: a quick survey of my kitchen revealed tofu and a cluster of brussels sprouts. There was also a vibrant bouquet of cilantro tucked into the refrigerator door begging to be used. I scanned the cupboards and pulled down a small bag of (already toasted!) pecans and the remnants of a once full bag of my favorite sugar. Garlic? Check. If you don't love cilantro, swap in a big fistful of pea shoots.

Just a few minutes of knife work and a some fast work with a hot pan separated me from my dinner. I cooked the tofu first, then finished with the brussels sprouts. It worked out nicely that only one pan was dirtied in the process.

Kung Pao Brussels Sprouts


I have always been someone who puts hot sauce on everything, and vegetables are no exception. So when I saw Kung Pao Brussels Sprouts on the menu at Beatrix in Chicago’s River North neighborhood, I knew they would be right up my alley. As predicted, those spicy sprouts were the highlight of my meal. Obviously, I had to recreate them in my home kitchen, and I’m thrilled to say they were a success.


If you wrinkle your nose at the mention of Brussels sprouts, you’re definitely not alone. They have a pretty bad reputation, being the stinky mini cabbages that they are. But if you haven’t tried them since your mom forced you to choke them down at the dinner table, this recipe is a fantastic re-introduction. Likewise, if you’ve never had Brussels sprouts, roasting and tossing them with spicy kung pao sauce and crunchy peanuts is a great way to see if you like them.

The recipe below yields about three to four small servings as a side, or two servings if you’re eating the sprouts as an entrée over rice or quinoa. For extra protein, I recommend frying some tofu and tossing it in the sauce with the Brussels sprouts just before serving. By the way, the sauce is inspired by one of my all-time favorite meals by Minimalist Baker. Her General Tso’s Tofu Stir Fry is simply incredible. I turned up the heat in my iteration so if you’re sensitive to spicy foods, cut the chili garlic sauce in half.


Brussels Sprouts and Tofu Stir-Fry - Recipes

Sweet-and-Sour Tofu and Brussels Sprouts Stir-Fry is a delicious answer to weeknight dinner. Packed with quality protein, fiber, and heart-healthy fats, this meatless main is sure to satisfy.

  • 2 Tbsp. coconut oil or canola oil, divided
  • 1 (14-oz.) pkg. extra-firm tofu, pressed/drained and cut in ½-in. cubes

  • 1 lb Brussels sprouts, trimmed and halved
  • ¼ cup minced shallots
  • 3 garlic cloves, sliced thin
  • 3 Tbsp. gochujang sauce (such as Annie Chun's)
  • 2 tsp. honey
  • 2 tsp. lower-sodium soy sauce or tamari
  • 1 Tbsp. rice vinegar
  • ¼ cup water
  • ¾ cup raw cashews
  • ½ cup freshly torn basil
  1. Heat 1 Tbsp. oil in a large nonstick skillet or wok over medium-high. Add tofu season with salt. Cook 8 to 10 minutes, turning occasionally, until golden-brown. Transfer to a plate.
  2. Add remaining 1 Tbsp. oil to pan swirl to coat. Add shallots and garlic cook 1 minute. Add Brussels cook 2 to 3 minutes, stirring occasionally.
  3. In a small bowl, whisk together the gochujang, honey, soy sauce, vinegar, and ¼ cup water. Pour mixture in pan and toss to coat. Cover skillet and cook until Brussels sprouts are bright green, about 4 to 5 minutes. Add cashews and tofu cook 3 to 5 minutes, stirring frequently, until Brussels are tender and sauce coats vegetables. Stir in basil.

Brussels sprouts and tofu

B russels sprouts are really quite versatile. Here, they are charred to enhance their flavour and keep their firm texture. The tofu is marinated in a potent mixture to give it added personality. The resulting dish may even convert some firm abstainers from tofu (as I was until recently) and/or sprouts. Serve with steamed rice. Serves four.

150g firm tofu (Tau Kwa)
2 tbsp chilli sauce
1½ tbsp soy sauce
3 tbsp sesame oil
1 tsp rice vinegar
1 tbsp maple syrup
500g brussels sprouts
180ml sunflower oil
Salt
100g spring onion, sliced
½ small chilli, deseeded and finely chopped
120g shiitake mushrooms, halved
15g picked coriander leaves
1 tbsp toasted sesame seeds

First, marinate the tofu. In a bowl, whisk together the chilli sauce, soy, two tablespoons of sesame oil, vinegar and syrup. Cut the tofu block into 0.5cm thick slices and then each slice into two squarish pieces. Gently lay in the marinade and set aside.

Trim the bases off the sprouts and cut each lengthways into three thick slices. Take a large, nonstick pan, and in it heat up four tablespoons of sunflower oil. Add half the sprouts and a little salt, and cook on high heat for two minutes. Don't stir much - you want them almost to burn in a few places and cook through but remain crunchy. Transfer to a bowl and repeat with the rest of the sprouts.

Add two more tablespoons of oil to the pan, heat up and sauté the onion, chilli and mushrooms for a minute or two. Transfer to the sprout bowl.

Leave the pan on high heat and, using a pair of tongs, lift half the tofu from the marinade and gently lay in the pan (be careful: the oil may spit), spaced apart and in one layer. Lower the heat to medium and cook for two minutes on each side until nicely caramelised. Transfer to the sprout bowl and repeat with the rest of the tofu.

Once all the tofu is cooked, remove the pan from the heat and return all the cooked ingredients to it. Add the tofu marinade and half the coriander. Toss together and allow to cool slightly in the pan. Taste and add salt if needed. Stir in the remaining sesame oil (extra, if you like) and serve warm, not hot, garnished with sesame seeds and the rest of the coriander.

In a bowl, combine the sweet chile sauce, soy sauce, rice vinegar, maple syrup, and sesame oil. Add the tofu cubes and stir until combined. Set aside.

Trim the ends off the Brussels sprouts, and then cut each piece into three thick slices.

In a large nonstick pan, warm four tablespoons of the canola oil over medium-high heat. Add half of the sprouts, or as many as will fit in one layer. Season with a little salt, and let cook until very well browned, about two minutes. (Note: Only cook the sprouts on one side.) Remove the sprouts with a slotted spoon and set aside in a bowl. Add a little more oil, and repeat process with remaining sprouts. Set all the sprouts aside in a bowl when done.

Pour two tablespoons of oil into the empty skillet and turn the heat to medium-high. Add the scallions, diced chile, and mushrooms. Cook, stirring occasionally, until mushrooms are tender, one to two minutes. When done, scrap the contents into the bowl with the sprouts.

Place the skillet back over high heat. Using a slotted spoon, remove half of the tofu pieces from the marinade and add to the skillet. Reduce heat to medium, and cook until browned all over, about two minutes a side. Transfer tofu to the bowl with the sprouts. Repeat process with remaining tofu pieces.

When all the tofu is cooked, add all of the contents from the bowl back into the skillet. Add the marinade and half of the cilantro. Turn off the heat, and stir well. Let cool down for a minute. Season to taste with salt. Sprinkle with toasted sesame seeds and garnish with the remaining cilantro.
